Week One -

Here are this weeks recipes. If you know anyone else in WW that may be interested, please send them the link.

Pam Cox Submits:
Steak Fries
5 med red potatoes
1 Tbls olive oil
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp ground nutmeg
1 garlic clove, crushed

Preheat oven to 450
Peel potatoes: cut each one lengthwise into 6 wedges. Pat wedges dry w/paper towel & place in a 11 x 7 baking dish. Drizzle olive oil over wedges. Sprinkle with salt, pepper, nutmeg and garlic. Toss well. Bake potatoes @ 450 for 30 minutes or until tender, stirring occasionally.

6 servings (5 wedges = 1 serving)
1 Serving = 2 points

Cheryl Ogle Submits:
Spicy Potato Soft Tacos
(a WW variation on Sandra Lee’s Semi-Homemade Light Cooking)
Serves 5 tacos if measured by 3oz potatoes cooked
1 tblsp taco or fajita seasoning (no salt) Spice Hunter
1 tblsp Canola Oil
1 16oz bag of Reeser’s Refrigerated Red/Skinned Potatos
1/2 to 1 c of No Fat Cheese (Kraft)
Bag of chopped Romaine Lettuce (Fresh Express)
Low Cal Tortillas - I use 1 point ones
Refried Beans
3/4 c Cilantro Flavored Pace Salsa

Optional additions: Onions chopped, tomatoes chopped, radishes

Prepare cookie sheet w/aluminum foil Preheat oven to 350.
In med bowl, mix oil and seasoning. Mix in potatoes until coated.
Put mixture onto cookie sheet and cover w/cheese. Bake 15 minutes.
Meanwhile, in a microwave safe container, mix beans and salsa. Cook in microwave 3 minutes.
Prepare tacos with 3 oz potatoes, beans, lettuce, onions, tomatoes, etc.
Makes 5 tacos if you use all 3 oz's (I use smaller tortilla's and make 2 from the 3 oz so it can make more).
Points: 3 each (or 4 for 2 small soft tacos if you split the potatoes).


Pauline Taylor submits a tried and true WW recipes:
BANANA SPLIT PIE
1 c. sliced banana
1 sm. (1 oz.) pkg sugar-free, vanilla instant pudding mix
2 c. fat-free, skim milk
1 1/3 c. Cool Whip
1 flat (8 oz) can crushed pineapple, drained
1 1/2 sliced strawberries
1 9-in refrigerated or frozen pie crust

Bake pie crust according to pkg directions and let cool.
Layer banana slices in bottom of crust
Mix pudding mix with 2 c. milk. Pour over banana slices.
Let set up a couple of minutes then spoon layer of pineapple over pudding.
Spread Cool Whip over pineapple.
Layer Strawberries over Cool Whip.
Chill until ready to serve.

Makes 8 servings---4 points per serving

CHOCOLATE PIE
1 sm. (1 oz.) pkg chocolate instant pudding mix
2 c. fat-free skim milk
2/3 c. Cool Whip
1 9-in.refrigerated or frozen pie crust
Bake pie crust and let it cool.
Mix pudding mix, milk, and Cool Whip with wire wisk.
Pour into crust. Refrigerate one hour before serving.
Makes 8 servings---3 points per serving

As we try to find new and exciting recipes, we will sometimes encounter some great recipes that give us variety and other times we find that there are recipes we wish we hadn't wasted our time on.
